Expert of the online publication BelNovosti, chef Yulia Arkhipova, told how butter can be replaced in baking.
Vegetable oils
Vegetable oils such as olive, sunflower, pumpkin and flaxseed oils can be used as a substitute for butter.
If the recipe calls for melted butter, replace it with the same amount of vegetable oil, and if you need chunks, reduce the portion by a quarter.
Applesauce
Apples are easy to find in any kitchen. Unsweetened puree from these fruits gives baked goods softness and a pleasant sourness. Use it strictly in the amount specified in the recipe.
Greek yogurt
If the recipe calls for solid butter instead of melted butter, replace it with an equal amount of natural yogurt. Add another quarter cup more flour so that the dough is not too runny.
Banana
Bananas add a creamy flavor to baked goods. Replace the butter in a recipe with an equal amount of ripe bananas to make delicious cookies, cakes, pies, and muffins.
Cream cheese
Finally, you can use mascarpone, ricotta, cream cheese or even regular cottage cheese in the recipe - you need the same amount as in the cooking instructions. Pre-strain the ricotta and cottage cheese through cheesecloth to get rid of excess liquid.
