To do this, you will need regular table vinegar - it will not affect the taste of the cheese, but will significantly extend its shelf life.
You need to wrap a piece of cheese in a clean cloth or parchment, slightly moistened with vinegar, and put it in an airtight container. Store, of course, in the refrigerator.
You can even just soak the cheese in vinegar – the effect will be the same.
