The index shows what effect carbohydrates have on changes in blood glucose levels. The higher it is, the worse it is for the body.
If you replace a healthy lunch with sandwiches, you should be prepared for the fact that the glucose level in the body will increase sharply, in response to which the pancreas will be forced to produce an increased dose of insulin.
The body perceives such a volume of glucose in the blood as harmful, so it tries to reduce it, converting part of it into energy and storing part of it as fat reserves.
As a result, glucose levels naturally drop and we feel the urge to snack.
If you are not ready to give up sandwiches on your table, at least replace them with a healthier option consisting of a small piece of gluten-free rye bread and lettuce, tomatoes, cucumbers, boiled beef or fish and an omelet.
