Why minced fish can taste bitter: you can’t make tasty cutlets from such a product

Fish cutlets are often served for lunch or dinner, as they are a tasty, healthy and nutritious dish.

The only problem is that the raw material for their preparation, that is, minced fish, can sometimes taste bitter. Why this happens - explained the expert of the online publication "BelNovosti", chef Yulia Arkhipova.

Mistakes when cutting fish

If the fish was gutted carelessly, bile from the bladder can get into the mince, which will make the cutlets taste bitter.

Too much onion

Fish has a delicate taste and aroma that can be easily drowned out, for example, by overdoing it with onions. This ingredient can also be the culprit of the bitter taste of fish cakes.

Low quality

If you do not prepare the minced meat yourself, but buy a ready-made product, pay attention to its quality: often unscrupulous manufacturers use stale or low-quality fish for its preparation.

Excess of spices
