Due to the heat treatment that foods undergo during cooking, some of them change their color.
As the expert of the online publication BelNovosti, chef Yulia Arkhipova, rightly notes, a golden crust on meat or fish really does look appetizing.
On the contrary, such an “upgrade” only harms vegetables and cereals.
How to preserve the color of cabbage
Therefore, if you are going to cook cabbage pies, the vegetable should be prepared in advance so that the appearance of the baked goods does not disappoint you later.
Chop the required amount of cabbage, then pour boiling water over it, and finally pour ice water over it for a couple of minutes.
All that remains is to squeeze out the moisture from the cabbage and put it in the frying pan.
As a result, nothing can turn the cabbage brown during the cooking process.
How to Keep Rice from Discoloring
Rice can also change color during cooking. To prevent this, add a couple of drops of lemon juice to the pan with the cereal.
Please note: rice should only be added to the water when it has been salted and is already boiling well. Do not cover the pan with a lid until the rice is cooked – this is the only way to get perfectly white and fluffy rice.
For reference
Cabbage is a biennial plant of the genus Brassica of the Brassicaceae family, domesticated more than 3,500 years ago, an important agricultural crop, a popular vegetable and ornamental plant.
