Eggplant caviar is already a classic appetizer. Any gardener can prepare it by collecting the remains of the harvest in the beds.
There are several options for preparing vegetable caviar. This recipe is easy to make.

You will need:
- eggplants 1 kg;
- pepper 1 kg;
- tomatoes 1.5 kg;
- onions 0.7 kg;
- sugar and salt 1 tbsp. l;
- garlic 10 cloves;
- vinegar (9%) 1 tbsp;
- vegetable oil ½ cup.
How to cook
1. Peel and chop the onion, fry in vegetable oil.
2. Peel the tomatoes, chop them and fry them in a frying pan together with the onions.
3. Fry for 2-3 minutes and add the chopped bell pepper. You can add zucchini to taste.
4. Add half a glass of vegetable oil and chopped eggplants.
5. Bring the vegetables to a boil, simmer for another 20 minutes on low heat and add salt, sugar and garlic passed through a press.
Grind with a blender, bring to a boil, add vinegar and pour the caviar into sterilized jars. Once cooled, store in a dark and cool place.
