If the mince is prepared from meat minced through a meat grinder, you can use the same meat grinder, blender or grater to chop the onion.

The onion will turn into a mush and give off a lot of juice – the resulting cutlets will be unusually juicy.

If you are preparing chopped cutlets, then you need to chop the onion with a knife.

The size of the cut depends on the cook's preferences. If you decide to chop the onion into large pieces, steam the cutlets under the lid to avoid unpleasant crunch and the taste of raw onion.
