The key to perfect dumplings is the right dough.
If you don’t make pelmeni at home because they boil over, burst, and their filling falls out, try kneading the dough a little differently. How exactly – explained the expert of the online publication “BelNovosti”, cook Yulia Arkhipova.
You can prepare the necessary ingredients and get to work. You will need:
- 600-650 g flour,
- 2 eggs,
- 1 teaspoon salt,
- 190 ml of water (it should be ice cold),
- 60 ml vegetable oil.
The secret ingredient that no experienced housewife can do without when preparing dumplings is starch, about half a teaspoon.
Take the required amount of flour (it may vary depending on the size of the eggs) and sift it. Don't forget about the starch.
Make a depression in the center of the resulting mound, add salt and break the eggs.
Stir, then measure out the required amount of water, mix with butter and add to the dough.
Mix all ingredients again until smooth. Use a dough mixer if necessary.
Let the dough sit under film or in a bag for 30 minutes.
Before making the dumplings, lightly knead the dough again. Add a little flour if necessary.
