Sauerkraut soup is a true culinary classic that is associated with coziness and a warm home.

Since the cold weather is just around the corner, the expert of the online publication BelNovosti, chef Yulia Arkhipova, decided to share the intricacies of preparing a dish that can warm you up in the most chilly weather.

The basis of any soup is broth.

To make the cabbage soup truly delicious, it is recommended to use several types of meat to cook the broth.

The combination of pork and beef will give the dish a special richness, and adding chicken will make it light and flavorful.

Remember: the broth will be concentrated and tasty if you cook the meat for quite a long time – at least two hours on low heat.

Vegetable frying

Be sure to add fried onions and carrots to the shchi, browned in a frying pan with vegetable oil. If desired, you can add tomato paste to the fried onions – this will make the shchi taste even richer.

Sauerkraut

When preparing shchi, you cannot simply add sauerkraut to the pot. Before doing this, it is recommended to fry it in a frying pan in vegetable oil, after squeezing out the brine and cutting it into small pieces.
