Many people love lard. And what about "general's" lard? Those who have tried it say that it is impossible to tear yourself away.
Why is it called that? Apparently, because the thin fat has layers of tender meat that resemble generals' stripes.
As Yulia Arkhipova , a culinary expert and fourth-class baker for the online publication Belnovosti, explained, many value this lard because only 4 kilos of the product are obtained from one pig.
So, here is the recipe for making "general's". You will need: a kilo of lard, mustard (60-70 grams), ground black and aromatic pepper.
You will also need garlic (40-50 grams), bay leaves (5-6 pieces), smoked paprika and soy sauce (a few drops).
We start cooking by soaking the lard in water with salt (25 grams of salt per 1 liter of water). Soak for 4-6 hours.
Then we take it out of the water and dry it with a towel, after which we rub it with mustard, ground pepper and grated garlic, add ground paprika and soy sauce.
Then fold the lard in half (skin side out) and put the bay leaf inside.
After this, let the product marinate for 4 to 6 hours.
After this period of time, roll the lard in foil and place it in the oven for 40 minutes (temperature 190 degrees).
Then we take it out, unfold the foil and see if the skin is browned. If not, we leave it in the oven for another 10-12 minutes, but at 200 degrees.
