It is important to note: if the water remains dark even after 5 or more rinses, the procedure should be repeated.
Soak
After rinsing, it is recommended to soak the rice in cold water for 20-30 minutes.
This allows the grains to swell and absorb water, which promotes more even cooking and prevents sticking.
What should be the ratio of water to rice
One of the key points is the correct ratio of water to rice.
For round grain rice, it is optimal to use a ratio of 1:1.5 (one part rice to one and a half parts water).
If you want drier rice, you can reduce the amount of water to 1.25 parts.
What cooking technique to use
It is better to place rice in cold water without waiting for it to boil.
When the water boils, reduce the heat to low, cover the pan with a lid, and cook the rice for 15-20 minutes.
It is important not to open the lid or disturb the rice during the cooking process.
After cooking is complete, remove the pan from the heat and leave it under the lid for 10 minutes.
This allows the remaining moisture to be evenly distributed throughout the grains.
Beating rice
Once the rice has settled, it is gently beaten with a fork to separate the grains and achieve the desired friability.
This must be done carefully so as not to damage the structure of the grains.
The most interesting thing is that many people don’t know about this trick, although it is key.
Tips and Tricks
There are also a few cooking tricks.
1. You can add a small amount of oil (vegetable or butter) or vinegar to the cooking water. This helps prevent the grains from sticking together.
2. Pots with thick bottoms help distribute heat evenly and prevent burning.
3. To add additional flavor, you can add spices to the water, such as bay leaf or a clove of garlic.
