Cabbage is a healthy product, and sauerkraut is doubly healthy.
To prepare it you will need (the quantity of ingredients is given approximately for a head of cabbage weighing 1.5 kg):
- 2 carrots (small size);
- 2-3 tablespoons of salt (depending on your own preferences);
- 1-2 cloves of garlic (optional);
- spices (black peppercorns, bay leaf, coriander).

1. The head of cabbage needs to be washed and the top layers removed, then cut into thick slices.
2. Transfer the shredded cabbage into a bowl and add salt, then stir and press. Leave the cabbage for about 10 minutes so that it releases juice.
3. This time can be used usefully - to shred the carrots using a grater with large holes. Combine the vegetables together and mix.
4. Place the cabbage in glass jars (ceramic containers will also work), pressing down each layer with your hands or a wooden stick.
5. Don’t forget about the spices, which should be sprinkled on each layer of cabbage.
6. Repeat these steps until you run out of “raw materials” or until you fill the container allocated for cabbage.
7. Cover the neck of the container using a clean cloth or a wooden lid.
8. Don’t forget about the oppression, under which the cabbage should stand for about 3-4 days.
9. All that remains is to take the sauerkraut to the refrigerator, where it will be stored.
