How to cook squid so that they come out tender and not rubbery: like in the best restaurants

Squids are famous for their capricious “character” – the slightest mistake and the product is irreparably spoiled.

Most often, what happens is that because seafood is left in the pan for too long, it tastes like a rubber boot.

Therefore, today we will hasten to share with you a method, using which you will never find yourself in such a situation - the cooked squid will be tasty, and most importantly - tender.

So, if you have uncleaned squid at your disposal, first of all remove the film from them and get rid of the chitinous skeleton.

When you have only clean carcasses left on hand, cut them into rings. If the recipe requires a whole carcass, you don’t need to cut anything, of course.

Now sprinkle our "preparations" with salt - you don't need much, to taste, then put them in a deep bowl and pour boiling water over them. After a minute, the squids should be thrown into a colander and placed under a stream of cold water from the tap.

Please note: for a whole carcass, the procedure should be repeated again.
