What to do if pilaf has turned into mush: a simple way to restore rice's friability

If you were cooking pilaf, but everything didn’t go according to plan and you ended up with rice porridge with meat in the cauldron, don’t despair.

Experienced cooks have long known about a simple method that will help correct this situation.

The most important thing is that it will take you a couple of minutes and a few pieces of the most ordinary bread.

So, arm yourself with a flat plate, the diameter of which should be smaller than the diameter of the dish in which you cook the pilaf.

Place a few pieces of bread on this plate. It would be even better if you had some stale slices or crackers on hand.

Now place the plate in the cauldron with pilaf and cover it with a lid.

Wait 7-10 minutes, after which you can safely remove the structure with bread and evaluate the result.

Thanks to the ability of bread to absorb excess moisture, you should get a tasty and crumbly pilaf.
