1. First of all, carefully examine the skin.
Fresh herring has a bluish-steel skin color and does not have any inclusions.
A yellow tint means that the fish is not very fresh, and a white coating indicates that a low-quality mixture was used for salting.
2. Assess the firmness of the carcass.
To do this, press the fish with your finger and watch how long it takes for the dent to smooth out. You should feel that the herring is elastic.
If the hollowness remains, it means that the product cannot boast of freshness.
3. What color are the gills?
If the gills of the fish have a dark red tint, this means that the herring can be safely added to your shopping basket.
But you shouldn’t buy fish with brown gills – it has been stored for too long.
