First, the color. It should be uniform, not too dull and not too bright.
Too saturated a color may indicate the addition of dye.
Yellow or brown spots are a sign of fat oxidation.
Such fish should not be eaten, warned Roskachestvo experts.
They reminded that each type of fish has its own color. For example, sockeye salmon, pink salmon and chinook salmon are bright red.
Salmon and trout have a gradation of shades from bright orange to light orange.
The too bright pink and red in these species indicate that the manufacturer most likely added dye, experts said.
Secondly, the fish should not have any plaque or damage, and it should not flake.
Third, study the ingredients. Ideally, it should only contain fish and salt.
The presence of benzoic and sorbic acids is also allowed.
