The packaging must indicate the specific name of the fish, and not the generic “salmon caviar”.
For example, there should be the words “trout”, “pink salmon” or “coho salmon”.
It is worth noting that they often sell structured caviar - not a fake, but also not full-fledged, real caviar.
The trick here is that manufacturers use gelling additives and colorings to give the product a marketable appearance.
The latter give the damaged caviar mass a spherical shape, which resembles real caviar.
If there is no information on the can that the caviar is structured, look at the composition.
Instead of the word “caviar” there will be the phrase “caviar mass”.
