What foods does buckwheat not go well with?
Firstly, you shouldn't eat buckwheat with eggs. The soluble fibres contained in buckwheat slow down digestion and impair the absorption of protein, which eggs are rich in.
This combination can cause at least a feeling of heaviness in the stomach.
Secondly, you shouldn't combine buckwheat with milk. The phytic acid contained in buckwheat impairs calcium absorption.
You can reduce the amount of phytic acid by soaking buckwheat in water before cooking.
You should also not drink black tea after eating buckwheat. The tannins it contains prevent the absorption of nutrients from buckwheat.
