All you need is regular salt and vinegar.
At first glance, it may seem that acetic acid does not go well with mashed potatoes.

Adding slightly acidic vinegar to potatoes softens the tubers and enhances their flavor.
You can use plain, strong vinegar – white or pink, for example.
But you shouldn’t add balsamic vinegar or any other vinegar with a strong aroma – as a result, the potatoes will acquire a strange aftertaste.
As for salt, instead of salting the potatoes once, try generously sprinkling salt into the pan while boiling the potatoes, adding it while mashing, and sprinkling the finished dish with flaky sea salt.
