Lack of onion
Don't be afraid to add too much onion: it certainly won't spoil the pancakes. But its deficiency will definitely not do the dish any good: the pancakes will come out dry.
It is best to chop the vegetable on a fine grater and immediately mix with the potatoes.
Flour
In most cases, this is the main "culprit" of dry potato pancakes. Therefore, try to do without using flour. After all, if you squeeze the potato mass properly with a sufficient amount of starch, then there is no need for eggs.
