Quick to make and quick to eat: how to make cottage cheese hedgehogs for tea

Cookies prepared according to this recipe are swept away in literally half an hour, so if you decide to cook them, you can safely knead the dough for several portions.

The recipe was shared by the expert of the online publication BelNovosti, chef Yulia Arkhipova.

The ingredients are very simple:

  • 220-250 g of cottage cheese (it is better to take 9% fat),
  • 100 g butter,
  • 170-180 g flour,
  • 1 pinch of salt,
  • 1 packet of baking powder,
  • Sugar – to your own taste.

Take the butter out of the refrigerator ahead of time so that it is soft by the time you are ready to knead the dough.

When the butter reaches the desired consistency, mix it with cottage cheese, salt and vanilla.

At this stage, you need to add half of the amount of flour indicated in the recipe and baking powder. Gradually adding the remaining flour, knead the dough - it should come out soft and not stick to your hands.

When the dough is ready, place it in a bag and leave it in the freezer to freeze.

After this, grate the frozen dough on a coarse grater and form hedgehog-shaped cookies from the resulting shavings.

Place it on parchment paper and sprinkle sugar on top - you will need about half a teaspoon per piece (more or less is possible).

The cookies should be baked at 180 degrees for 15-20 minutes until our hedgehogs become golden brown.
