How to Make Sorrel Soup Without Sorrel: It Will Be Just as Delicious in Winter as in Summer

With the arrival of winter, many of us begin to yearn for the tastes and aromas of summer.

Why is it generally accepted that in the cold season, summer dishes that are associated with warmth, bright flavors and fresh ingredients suddenly become unavailable?

Expert of the online publication BelNovosti, chef Yulia Arkhipova categorically disagrees with this statement and suggests enjoying one of these “summer” dishes right now, in January.

We are talking about sorrel soup, which can be prepared even in the absence of fresh sorrel.

Ingredients required

To make sorrel soup without sorrel, but with the same rich taste and fresh aroma, you need to prepare the following products:

  • A bunch of dill will refresh and add brightness.
  • A bunch of parsley will add richness and juiciness to the dish.
  • A bunch of green onions - their slight spiciness will be a great addition.
  • A bunch of spinach – it is this that is tasked with replacing the sorrel, giving the soup its characteristic taste.
  • The juice of one or two lemons – for a slight sourness, which is so important in sorrel soup.
  • Potatoes and carrots are the basis of the dish, giving it a satisfying flavor.

Cooking instructions

Wash all greens thoroughly under running water. Remove tough stems and finely chop leaves and stems. If spinach leaves are small, leave them whole.

It's time to make the broth. To do this, bring 1.5-2 liters of water to a boil (you can use ready-made vegetable or chicken broth instead - this will make the taste even richer). Add chopped potatoes, carrots and onions to the water and keep the pan on medium heat until the vegetables are ready.

After this, feel free to add the remaining ingredients: lemon juice, dill, parsley, green onions and spinach.

Let the soup boil, but do not overcook the greens so that they do not lose their bright color and beneficial properties.

Once the soup comes to a boil, turn off the heat and let it sit, covered, for a few minutes.

If desired, when serving, you can add a little sour cream or olive oil for a richer taste.
