How to make dough
Take a large bowl and mix 315 g of flour, 1 teaspoon of ground ginger, the same amount of cinnamon and 0.5 teaspoon of ground cloves. Add 1 teaspoon of soda and a pinch of salt.
In a second bowl, beat 115 g of softened butter with 100 g of sugar until fluffy, then add 120 g of honey and 1 egg, continuing to beat.
Gradually add the dry ingredients from the first bowl and knead a homogeneous dough. Wrap it in cling film and refrigerate for 1 hour.
Rolling and baking
Sprinkle the table with flour and roll out the dough to make a layer 0.5 cm thick. Cut out cookies with cookie cutters and place them in an oven preheated to 180 degrees, placing them on baking sheets previously covered with parchment paper.
Bake the cookies for about 8-10 minutes, until the edges are golden brown.
Cookie Decorating
For the glaze, beat the egg white with powdered sugar and a few drops of lemon juice.
Divide it into several cups and color the contents of each cup with candy coloring in different colors.
