Expert of the online publication BelNovosti, chef Yulia Arkhipova told how to make a delicious rassolnik without using this seemingly irreplaceable ingredient.
Pickles
The most commonly used method is to replace salted cucumbers with pickled ones. As a result, the dish will acquire a slight sourness due to the vinegar, but the taste of the rassolnik can be easily adjusted by adding a little sugar to the pan.
Green pickled tomatoes
The second option for replacing cucumbers is green pickled tomatoes. They used to be available in Soviet canteens. Now you can get this product in a large supermarket or at the market.
Sauerkraut
Another ingredient that can replace cucumbers in rassolnik is sauerkraut.
The taste of such a first course will, of course, differ from the classic version, but it is quite possible that you will like it even more.
Salted mushrooms
As an alternative to pickles, you can use milk mushrooms, saffron milk caps or other pickled mushrooms. This rassolnik will satisfy even the most sophisticated gourmets.
