How to make pancakes so that they turn out fluffy: you don’t have to add soda

The aroma of pancakes served for breakfast makes even the most inveterate sleepyheads get out of bed.

However, cooks who prepare them often have a question: how to make pancakes fluffy and airy?

The answer to this question was found by the expert of the online publication BelNovosti, chef Yulia Arkhipova.

As the specialist explained, you can go two ways.

The first one is known to everyone and consists of adding a little soda to the dough. The second one is less common, but nevertheless guarantees an excellent result.

To do this, while preparing the dough, you need to separate the whites from the yolks and beat them.

First, until soft peaks form, and when you achieve the desired result, you can add sugar and vanilla.

After this, beat the whites again until stiff peaks form.

Carefully add the protein mixture into the dough and mix gently.

As a result, your dough will be filled with tiny air bubbles – although they are practically invisible to the human eye, they will make the pancakes unusually fluffy.
