1. If you are going to cook potato pancakes, choose yellow varieties of potatoes for this dish.
2. Before you start grating the potatoes, grate the onion. Only then can you tackle the potatoes.
The potato mixture added to the onion should be mixed immediately – the vegetable will prevent the potatoes from darkening.
3. The chopped onions and potatoes should be squeezed thoroughly to remove excess moisture.
This trick will help you use much less flour.
4. It is also recommended to add a small amount of sour cream to the mixture for making potato pancakes, which will prevent the potatoes from darkening and make the pancakes softer and more tender.
