Main Ingredients

• watermelon wedges – 150 grams;
• cucumber – 1 piece;
• tomatoes – 1 piece;
• mint leaves – to taste;
• olive oil – 2 tablespoons;
• lime juice – 1 teaspoon;
• salt – 1 pinch;
• pepper – 1 pinch;
• goat cheese – 2 tablespoons.

Step by step preparation

The process of making delicious watermelon gazpacho will be easy even for a beginner.

It's all pretty simple. First, you need to chop and divide all the ingredients into the necessary proportions to create gazpacho.

Then boldly place in a blender the watermelon slices (only the pulp), cucumber and tomato pieces, olive oil, lime juice and mint leaves. Everything needs to be thoroughly whipped to obtain a homogeneous mass.

Pour the resulting homogeneous mass into plates, add salt and pepper to taste, and garnish with goat cheese and mint leaves.

You shouldn't serve gazpacho to the table right away, it is recommended to let it sit for about five minutes and only then you can please your guests. The dish must be saturated with all the flavors.
