For a kilogram of red fish you will need two tablespoons of salt, a teaspoon of black pepper (preferably freshly ground), a tablespoon of sugar and 10 sprigs of dill.

Mix salt, pepper and sugar in a small container, chop the dill.

We clean the fillet from bones, wash it, dry it with a paper towel, and rub it on both sides with the prepared spices.
