In summer, the number one dish can be called kholodnik or okroshka. It is difficult to say which of them is tastier.
But this is not the only refreshing dish on a hot summer afternoon. We offer an alternative option.
Expert of the online publication "BelNovosti" Yulia Arkhipova , a cook and fourth-class baker, told how to prepare a cold and healthy soup from cucumbers and avocado.
You will need:
- cucumbers (fresh) - 3 pcs.;
- avocado - 4 pcs.;
- lemon - 1 pc.;
- olive oil - 3 tbsp;
- wine vinegar (white) - 1 tbsp;
- water;
- spices to taste.
How to cook
1. Wash and peel the avocado, remove the pit, and cut the skin off the cucumbers.
2. Then cut everything into large pieces or immediately put it in a blender.
3. Add salt and spices to taste, olive oil, lemon juice to taste, vinegar to the prepared mixture and mix.
4. Dilute the prepared thick puree with cooled boiled water to the desired consistency, cool if necessary and serve.
