Real summer begins next week, and in the heat no one wants to eat hot first courses.
The best choice for the upcoming hot weather is cool okroshka.
Expert of the online publication "BelNovosti" Yulia Arkhipova , a cook and fourth-class baker, told how to prepare real okroshka.
You will need:
- kvass - 1.5 l;
- sausage - 300 gr;
- cucumbers - 2 pcs.;
- eggs - 4 pcs.;
- radish - 8 pcs.;
- mustard (optional) - 1 tsp;
- fresh herbs, pepper and salt to taste.
How to cook
There is a lot of debate about whether it is necessary to add potatoes to okroshka. But if the goal is to eat your fill with one bowl of okroshka, then you can add it.
Most chefs insist that this vegetable is unnecessary in the dish.
1. Boil the eggs hard, peel and chop into cubes.
2. The greens need to be finely chopped, the radishes, cucumbers and sausage cut into small cubes.
3. It is advisable to use natural kvass for okroshka, obtained through fermentation.
4. Pour all the prepared ingredients into a saucepan, pour in kvass, add salt and spices.
Cool in the refrigerator and serve, optionally with sour cream.
