Many people love this prickly relative of the raspberry for its tart-sweet taste, large size, and purple-gray color.
But that’s not all that blackberries can boast of – this berry is also incredibly healthy.
That's why the expert of the online publication "BelNovosti", chef Yulia Arkhipova, decided to share a recipe for a dessert with blackberries, which is worth trying this summer.
To do this you will need:
- 300 g shortbread cookies;
- 130 g butter;
- 100 g sugar;
- 500 g soft cottage cheese (fat-free);
- 2 eggs;
- 150 g natural yogurt;
- 350 g blackberries;
- 150 g strawberries;
- 50 g lemon;
- 1 tablespoon vanilla sugar;
- 1 pinch of salt.
Crush the cookies into small pieces, then mix them with melted butter.
From the resulting mass, make a dense base for the cheesecake by placing it in a greased baking pan and tamping it with a spoon or the bottom of a glass. The pan should be placed in the refrigerator for a while.
Remove the zest from half a lemon. You will also need the juice squeezed from half a citrus. Using a blender, turn the cottage cheese into a homogeneous mass.
In a large bowl, mix the cottage cheese with the sugar, yogurt, salt and vanilla sugar. Using a mixer, make the mixture smooth, then add the lemon zest and lemon juice and mix again.
Now it's time for the eggs. They should be added one at a time, each time thoroughly mixing the mixture with a whisk.
Pour the resulting curd mixture onto the shortbread crust and smooth it out using a spatula or spoon.
The pie should be baked in a water bath, pouring boiling water into a deep baking tray and placing the cheesecake pan in it.
Once the pie is ready, remove it from the oven and leave to cool, then place it in the refrigerator for another 4 hours.
All that's left is to grind the strawberries and some of the blackberries in a blender to get a smooth puree. Spread this puree on the surface of the pie and decorate the finished cheesecake with the remaining blackberries.
