How to check if the aspic has set
First, you can rub a drop of broth between your fingers. If they stick together, the aspic will harden.
Secondly, you can pour two spoons of cooled broth into a bowl and put it in the refrigerator.
If it hardens, you can pour it, if not, you will have to add gelatin.
To ensure that the aspic hardens evenly, it should be poured into shallow moulds with a flat bottom.
To turn the aspic over before serving, dip the pan into hot water for a few seconds.
