Eggplants prepared according to the recipe in this article turn out incredibly tasty, juicy, soft and satisfying.
Expert of the online publication BelNovosti, chef Yulia Arkhipova, is convinced that everyone who tries this dish will be delighted with it.
To prepare eggplant boats you will need the following ingredients:
• eggplants – 3-4 pieces;
• minced meat – 400 g;
• cheese – 100 g;
• onions – 1 large head;
• fresh tomatoes – 2 pieces;
• tomato paste – 1 tablespoon;
• garlic – 3 cloves;
• vegetable oil – 3 tablespoons;
• salt, pepper and spices – to taste.
Rinse the eggplants thoroughly under running water, then cut off the stems and cut each eggplant in half.
Using a spoon, carefully remove the pulp from each half of the eggplant, leaving walls about 1 cm thick. Pour boiling water over the resulting boats and leave for a few minutes. Cut the removed pulp into small cubes.
Heat some vegetable oil in a frying pan and fry the diced onion until golden brown. Add the diced eggplant and fry until soft.
Add the minced meat and chopped tomatoes to the pan and continue frying, stirring, until the minced meat is ready.
Add tomato paste, stir and simmer covered over low heat for about 10 minutes, stirring occasionally.
At the end of preparing the filling, add chopped garlic, salt, pepper and any spices to taste.
Drain the water in which the eggplants were soaked and dry them with paper towels. Place our boats on a baking sheet covered with baking paper and fill them with the filling.
Sprinkle with grated cheese and place in a preheated oven at 200 degrees for 15-20 minutes, until the cheese is completely melted. Sprinkle the finished dish with fresh herbs and serve.
