Pickled onions are a perfect accompaniment to grilled meat or fish and are also an ideal addition to salads.
Expert of the online publication BelNovosti, chef Yulia Arkhipova, told how to prepare pickled onions without using boiling water – so that they turn out soft, juicy and tasty, while retaining their pleasant crunch.
Another benefit of this method is that it removes the bitterness from the onion, meaning you can safely serve it with shashlik or lula kebab.
To prepare the marinade you will need the following ingredients:
• 1 glass of water;
• 2 tablespoons of vinegar (apple cider vinegar or regular table vinegar 9% will do);
• 1 tablespoon of sugar;
• 1 teaspoon of salt;
• 2-3 medium onions (you can use regular onions or more aromatic salad onions).
Dissolve sugar and salt in warm water. Add vinegar and mix thoroughly.
Cut the onion into rings or half rings (for salad – into cubes). Transfer the onion into a suitable container.
Pour the marinade over the onion until it is completely covered with liquid. Add a little water if necessary.
Leave the onions to marinate at room temperature for about 1 hour.
After 60 minutes, taste the onion. If you like the taste, you can drain the marinade, but if you want to add more sourness, leave the onion to marinate for another 30 minutes.
