How to Make the Perfect Dumpling Dough: They Won't Come Apart or Tear

To make the dumplings tasty, you need to pay enough attention not only to the filling, but also to the dough itself.

The recipe for the ideal dough for vareniki was shared by the expert of the online publication BelNovosti, chef Yulia Arkhipova - if you follow her recommendations, the vareniki will turn out tender, elastic and appetizing.

First, prepare the necessary ingredients. You will need:

  • wheat flour - about 3 cups;
  • milk – 200 ml;
  • vegetable oil – 2 tablespoons;
  • eggs – 1 piece (optional);
  • salt – 2 teaspoons;
  • sugar – 1 teaspoon;
  • starch – 1 teaspoon;
  • boiling water – about 100 ml.


Sift 2-3 tablespoons of flour into a bowl. Add salt, starch and, if necessary, a little sugar if you plan to make a sweet filling.

Then beat the egg with warm milk and add the resulting mixture to the flour. Mix thoroughly until smooth.

Next, add the vegetable oil into the bowl. Continue kneading the dough until it becomes soft and smooth.

And finally, the final stage is adding boiling water to the dough.

After this step, you can safely add the remaining flour. Continue kneading the dough until it becomes elastic, soft and springy.

You can even lightly “beat” it on the table, then cover the dough with film and leave it to rest for 30-35 minutes.
