Sour cream made from natural ingredients will be a great addition to the dishes on your table.
You can be sure that this natural product will be swept off the table as quickly as the dumplings with which it is usually served, says Yulia Arkhipova, an expert in the field of cooking for the online publication BelNovosti, who shared with us a recipe for sour cream from kefir.
To prepare homemade sour cream we will need:
• 1 liter of kefir;
• saucepan or deep bowl;
• colander;
• gauze folded in several layers;
• fridge.
Place a colander in a saucepan or deep bowl and line it with cheesecloth.
Gradually pour kefir into the pan. Please note: a product with a fat content of 2.5 percent or more is suitable for making sour cream.
Place the resulting “structure” in the refrigerator for at least 8 hours.
After the specified time has elapsed, remove the pan from the refrigerator and carefully squeeze out the excess whey from the resulting sour cream.
Transfer the sour cream into a clean container and place in the refrigerator for storage.
Important: do not pour out the whey - you may need it to prepare other dishes, for example, pancakes or crepes.
