The broth will be much better if you use one simple trick during the cooking process.
The secret to a delicious soup is to use roasted vegetables rather than raw ones.
The resulting broth makes a great lunch dish, or can be used as a base for any soup, gravy, or stew.
How to make a delicious broth
First, you need to wash and clean all the ingredients.
Carrots, celery, and purple and regular onions should be cut into large pieces and placed on a baking sheet, which should first be greased with oil.
Then the ingredients need to be salted, peppered, and sprinkled with thyme.
You should also add a few sprigs of parsley or other fresh aromatic herbs.
Bake the vegetables for about 30-40 minutes. As soon as they become soft and have a delicious brown crust, you can take them out.
After this, all ingredients must be placed in a saucepan and filled with cold water.
The broth should be cooked on low heat for no more than half an hour, and then lemon juice should be added. For each liter of water, you should take only one tablespoon of juice.
Afterwards, the dish needs to be kept on the fire for another 20-25 minutes.
The finished broth should be strained through a fine sieve and salted.
