But in order to knead the dough, soda alone is not enough - you also need to add an ingredient to the bowl with the other ingredients that could extinguish the sodium bicarbonate, and, as a rule, this component is vinegar.

Today we will tell you how to properly extinguish soda with acetic acid and what to do if it suddenly runs out.

Vinegar

Vinegar is the most common way to extinguish the baking soda, resulting in a fluffy and airy dough.

All you need to do is add baking soda to the dry ingredients and vinegar in a 1 to 2 ratio to the liquid ingredients, after which all the components of the dish need to be combined.

Lemon juice

If you don't have vinegar, you can use lemon juice or citric acid instead.

The principle of action is almost the same as with vinegar. Citric acid should be diluted in a small amount of water, the same should be done with soda, only in a different container, after which both solutions should be poured into the dough and mixed thoroughly.

Boiling water

To extinguish soda with hot water, you will need to dilute 1 teaspoon in half a glass of boiling water and knead the dough based on the resulting mixture. The method is used for pancakes.
