And 10 jars will not be enough: how to prepare the perfect beetroot caviar for the winter

The beetroot preparation prepared according to this recipe can be useful for borscht and vinaigrette. And as a salad it is simply priceless.

What’s especially nice is that it’s not difficult to prepare.

To do this, you will need the following ingredients for 3 kg of beets:

  • 300-400 g onions;
  • 3-5 small cloves of garlic;
  • 1.5 tablespoons of salt;
  • 2 tablespoons sugar;
  • 150 ml vegetable oil;
  • 80-100 ml of 9% vinegar.

So, to prepare beetroot caviar, its main component – beetroot – must be baked in the oven until done.

While the root vegetables are baking, take care of the onion, which needs to be cut into cubes and fried.

Grind the finished beets using a meat grinder or food processor. You can grate them or cut them into strips – whichever is more convenient for you.

Place the beets and onions in a saucepan, add salt, sugar, butter and garlic passed through a press.

The future preparation must be stewed for about 15-20 minutes, and vinegar must be added 5 minutes before removing from heat.

Now transfer the caviar into jars, sterilize for 10 minutes and close with lids.
