There is an option to combine business with pleasure. One of such recipes is pumpkin muffin with oatmeal. It is not difficult to prepare at all.
To prepare you will need:
- pumpkin pulp - 100 g;
- flour - 150 g;
- candied fruit - a handful;
- sugar - 100 g;
- oatmeal - 4-5 tbsp (heaped);
- sour cream - 2 tbsp;
- egg - 1 pc.;
- vegetable oil - 1 tbsp;
- soda - 1/3 tsp;
- vinegar (to extinguish the soda);
- nutmeg (ground) a pinch.
How to cook
The pumpkin pulp should be grated on a fine grater and mixed with sugar, oatmeal and sour cream.
Then add the mixed egg, butter and nutmeg, mix and sift the flour. Then add the soda, slaked with vinegar.
Knead the dough, and you can add candied fruit or raisins, then stir and let the dough sit.
At this time, turn on the oven and wait until it warms up to 180-190 degrees Celsius.
Grease the baking tins with oil, spread the dough and bake in the oven for 25-30 minutes.
When ready, sprinkle with powdered sugar and serve.
