This trick was picked up by professional chefs who work with whole pieces of meat. In order for the dish to be soft and tasty, a grate is "cut" on the surface of the product with a knife.
The depth of the cuts should be literally a few millimeters. After that, you can proceed to further work with the meat.
Lemon or kiwi
