If we are talking about sweet baked goods, then an egg can be easily replaced with 1 tablespoon of cornstarch and 2 tablespoons of water.
Also, try replacing eggs with banana, mashed to a puree consistency.
If the baked goods are supposed to be unsweetened, you can also use corn or potato starch in the amount of 2 tablespoons.
Alternatively, 1 tablespoon of dry milk, the same amount of cornstarch and 2 tablespoons of water.
You can replace the egg with 2 teaspoons of baking powder and 2 tablespoons of water.
A combination of 2 teaspoons of baking powder, 1 tablespoon of vegetable oil and 2 tablespoons of water will also come to the rescue.
Instead of an egg, you can use 2 tablespoons of milk, 0.5 tablespoon of lemon juice and the same amount of soda.
Finally, an alternative to the egg would be 2 tablespoons of milk and a quarter teaspoon of baking powder.
