Contrary to popular belief, the best vegetable for maintaining visual acuity is not carrots, but kale.
This was reported by the ophthalmologist from Great Britain, Neil Laird.
The expert explained why it is necessary to include this vegetable in the diet in a conversation with the Surrey Live publication.
How Kale Improves Eyesight
Kale is high in beta-carotene, zeaxanthin, and lutein, Laird said.
These substances minimize the negative impact of blue light and protect the eyes from age-related changes.
Moreover, regular consumption of this vegetable slows down the development of cataracts and other eye diseases.
The doctor noted that the benefits of kale for vision can be enhanced.
To do this, you need to combine it with foods high in healthy fats.
Such products, Laird said, include nuts, avocados and olive oil.
As the doctor explained, fatty foods improve the absorption of zeaxanthin and lutein.
Lutein and zeaxanthin are fat-soluble, so they are best absorbed when eaten with a small amount of fat, the expert advised.
