However, a number of scientific studies have shown that certain cooking methods can actually enhance the health benefits of vegetables.

According to her, the less time it takes to process, the more vitamins are preserved.
In this regard, certain cooking methods are distinguished.
One of them is steamed or microwaved. It allows you to preserve the maximum amount of useful substances (you don’t need a lot of water or oil here).
Another option is blanching. Dropping vegetables into boiling water for one to two minutes allows you to preserve the texture and color of the vegetables.
The third method is frying and baking. If you use oil in moderation, frying will improve the taste and increase the absorption of fat-soluble vitamins.
But it is worth remembering that during cooking, some of the beneficial substances go into the water.
In other words, if you decide to boil vegetables, it is better to use the broth for soups or sauces.
