To make the cabbage soup truly delicious, it is recommended to use several types of meat to cook the broth.
The combination of pork and beef will give the dish a special richness, and adding chicken will make it light and flavorful.
Remember: the broth will be concentrated and tasty if you cook the meat for quite a long time – at least two hours on low heat.
Be sure to add fried onions and carrots to the shchi, browned in a frying pan with vegetable oil. If desired, you can add tomato paste to the fried onions – this will make the shchi taste even richer.
When preparing shchi, you cannot simply add sauerkraut to the pot. Before doing this, it is recommended to fry it in a frying pan in vegetable oil, after squeezing out the brine and cutting it into small pieces.
