Some cooks add a little granulated sugar to Olivier salad.

It would seem that such an ingredient cannot improve the taste of a salad. Quite the contrary.

However, seasoned gourmets have long come to the conclusion that sugar makes food much more appetizing.

Thanks to the unusual additive, Olivier acquires a taste that the dish sorely lacks.

Why add sugar to salad

The ideal Olivier salad contains all four basic flavors: salty, sour, bitter and sweet.

The salty taste in the salad comes from the cucumbers. This same component provides the dish with a slight sourness.

A slight bitterness is provided by mayonnaise and onions.

But there is practically no sweet taste in the dish. This deficiency can be corrected with granulated sugar.

To balance the taste of Olivier, only half a teaspoon of sugar is enough. If you add more, the dish is unlikely to be improved.

But if you don’t overdo it with the sweet additive, the salad will turn out perfect.

How to add sugar to Olivier salad correctly

There is no need to add granulated sugar to a finished dish.

The sweet component should end up in the mayonnaise that you plan to use to dress the salad.
