Biscuit, bun or shortbread
In this case, you can mix:
- 5 tbsp. soda;
- 3 tbsp citric acid;
- 12 tbsp flour (starch).
Mix the ingredients thoroughly and store the mixture in an airtight container. Use in the same proportions as industrial baking powder.
Fermented milk products
If the dough is kneaded with fermented milk products, then soda can be successfully used. In this case, baking powder is replaced with soda, using it in the amount indicated in the recipe.
Soda and vinegar
If the dough is not made with kefir or sour milk, then the soda needs to be extinguished with vinegar, otherwise it will be felt in the baked goods.
You can replace 1 teaspoon of ready-made baking powder by quenching ½ teaspoon of soda with ¼ teaspoon of vinegar.
Soda
It can be added to unleavened, rich, choux and other dough. Just replace the entire amount of regular water used in the recipe with highly carbonated water.
If the effect is not sufficient, you can add citric acid and soda.
Alcohol
For shortcrust pastry you will need 1 tbsp per 1 kg of weight. Cognac or rum will do.
