Many summer residents have had to deal with problems more than once when storing beets - due to mistakes made during the process, the root vegetables spoiled, and instead of eating vegetables from their own garden, they had to buy them in the store.
Therefore, if you want to prolong the freshness and quality of beets for as long as possible, you should understand the basic principles and methods of storing this root vegetable.
Pay attention to the cleaning process
When handling beets, extreme care should be taken to protect them from mechanical damage.
It is forbidden to be rude when removing soil from root crops, as well as to subject the harvest to careless transportation. Damage to the peel and pulp of beets leads to pathogenic microorganisms getting inside, and the root crops will eventually rot and become unusable during storage.
Take care of the humidity level
In the room where beets are stored, the humidity level should ideally not exceed 90%, so constantly monitor and, if necessary, adjust the microclimate in the cellar.
If you notice that the humidity in the room is not high enough, leave 2-3 containers filled with water here.
Conversely, if there is excess moisture, take care to reduce its concentration.
To reduce humidity, place containers of salt in the storage area, which absorbs moisture well. And be sure to take the time to ventilate the room - this step will not only reduce the humidity level, but also prevent mold and the appearance of harmful microorganisms in the cellar.
