  2. The potatoes will taste bitter and quickly rot.
  3. As the fruit germinates, it gradually accumulates harmful substances and chemical compounds, such as the organic poison solanine.

Note that the main sign of solanine accumulation is the greening of the tuber. Chlorophyll is also formed in potatoes.

When ingested, these substances can cause drowsiness, weakness, headaches, and even poisoning.
