Growing vegetables consists of several stages, the main ones being sowing seeds, caring for plants and, of course, timely harvesting.

This time, the expert of the online publication BelNovosti, agronomist, landscape designer Anastasia Kovrizhnykh suggests talking about carrots, because you probably want to know when to harvest this vegetable to preserve its freshness and taste throughout the winter.

First, let us remember that the time for harvesting carrots depends on the variety and the ripening period of the root crops, which can vary.

It is important to follow the recommendations of seed producers and not to keep the crop in the ground longer than the prescribed time.

The maximum time that carrots can be kept in the soil is two weeks, but this period should not be exceeded.

If the root is left in the soil too long, it breaks dormancy and enters its two-year cycle of regrowing and producing seed-bearing flower stalks.

During this process, the carrot begins to use stored nutrients such as sugars and starch to start the growth process.

As a result, carrots harvested too late will not store well and will not taste very good.
